My muffins have improved :-)

Everytime I bake muffins, my heart will be hanging in the air until the finished product is ready for my judgement. <-_-> Most of the time, I was only "half-satisfied" . Either the texture is too cake-like or the muffins didn't rise.

However, as time goes by, and as I explore more muffins recipes from fellow food bloggers, my muffins are getting better. Really appreciate all foodie bloggers out there, who tirelessly post many fantastic recipes on their blogs.

Today, to consume the half a month old blueberries, I decided to bake Blueberry Choc Chips Muffins. I forgotten to note down which blog did I get the recipe from, really sorry (:-P. However, this recipe is really easy to follow and the result made me have a "water-melon" smile. :-)


Here's the ingredient: (make about 8 mini muffins)

200g self raising flour
1/4 tsp baking powder
60g sugar
1 egg
125ml milk
1/2 tsp vanilla essence
62.5g melted butter
blueberries
chocolate chips

Method:
1. Preheat oven at 180*C (according to your oven temperature). (the original recipe calls for 200*C)

2. Sieve SRF & baking powder together and make a well in the centre.

3. Add in sugar, berries, choc chips & stir well.

4. In another bowl, whisk egg, milk, vanilla together.

5. Pour wet ingredients into dry ingredients, add in melted butter & stir till just combine. Don't overmix. Batter will be lumpy.

6. Sppon into muffin tins until 3/4 full.

7. Bake for 25-30 mins.

8. Leave muffins in tin for 5 min before cooling on wire rack.

So long, I neglected my blog ;-/

Well, the past 2 months have been very busy month for me. Though I have baked some stuff, but have no time to upload them to my blog. Today, taking a breather, sitting down in front of the computer to do some blogging. Here are some goodies I have baked.






Ingredients: (make about 8 cakes)
100g Self Raising Flour
100g Caster Sugar
50g Ground almond (optional)
60g Butter, melted

30ml Milk
50g Dried cranberries
50g Chocolate chips

Method:
1. Mix the first 4 ingredients together, mix well but not over mix.
2. Add in milk gradually, depending on the consistency of the batter you want.
3. Fold in dried cranberries and choc chips gently. Mix well with the batter.
4. Fill muffin tins or cases till 3/4 full,
5. Bake in preheated oven at 180*C for 30 mins till golden brown or when skewer inserted to
the centre of the cake comes out clean.
6. Remove from oven and let it cool on wire rack.

For the above cranberry choc chips cupcakes, I don't follow any recipe, just out of my own estimation, a trial and error experiment. ;-) In fact, the texture of the cake is between a muffin, cookie and cake. I don't know what to catergorise them, so call them cupcakes. <^~^>" When the cupcakes were in the oven baking, the kitchen was filled with rich buttery & milky aroma, fantastic. The top crust was crispy and the choc chips gave it a chocolate-y smell. I should say, this trial and error experiment is quite successful. ;) (arrr..ggghhh)

I had made some chocolate cupcakes last month. This was my first attempt and I was quite satisfied with the results. They were richly aromatised with Hershey's Cocoa powder. My DH loves chocolate, so he gobbled down two when the cakes were fully cooled. <"__">

This is my favourite Fried Nian Gao (fried rice cake). Just mix some flour, 2 beaten eggs and as little as 2 tablespoonfuls of water to make the batter, dip sliced nian gao into batter and fry in hot oil until golden brown.

1. stays in Ang Mo Kio, area taken care by our PM Lee. I love staying here, bcoz it's convenient and bustling with life (i mean the central) ...

2. 5 days a week, I will come face to face with angelic faces of little children, listening to their joyous news, singing, likes and dislikes, and also complaints ... LOL ... guess what am I working as? <^_ ^ >

3. have long hair, was very tempted to cut it short like 4 years ago. now i'm not as determined as last time. anyway, whether long or short hair, it still suits me. but the weather is getting warmer... how?

4. my hobbies ... like sherlyn, i started baking last year. thus, my baking skills have lots of room for improvement... i also like to do handy craft but don't dare to blog it bcoz still very green in it.

5. my hubby is a Cantonese like me, we speak the same language, we like to eat cantonese food. it's a wonderful experience to have husband who speak the same dialect. next time our children will speak Cantonese too! hehe .... <^_^>
