Chocolate Chips Muffins

Muffins are among the easiest items to bake. Yesterday, within half an hour, I churned out these soft and fluffy and yummy choc chips muffins. The original recipe used plain flour with baking powder & soda, but I changed it to using self raising flour, because I do not want to have so much chemical in my muffins. I also changed from using butter to sunflower oil, which I think is much healthier. The result was equally good. The original recipe is from here.

Although I'm a big fan of cakes, breads and cookies but still, I'm too coward to try baking yet. This is due to I'm quite a weight conscious person and besides, I would only try to make something simple and if I have the ingredients or at least substitute with something that I already have.

I'm interested to try this muffin but may I ask how much self raising flour and sunflower oil to be used ? Many thanks !

The recipe is here:
250g self raising flour
half cup choco chips
half cup raisins (optional)
1 beaten egg
60g sunflower oil (in replacement of 60g melted butter)
175ml milk (i used skimmed milk)
150g sugar (u can reduce the amt)

1.Preheat oven at 180*C
2.Sift flour. Add choc chips to flour,mix with a spatula.make a well in the centre.
3.Pour in beaten egg, oil, milk & sugar into the well of the flour mixture.
4.Gently fold in all ingredients. Just mix until the flour is incorporate into the batter. DO NOT OVERMIX.
5.Spoon batter into muffins cups. Bake for 15-20 mins until muffins turn golden brown.
6.Let cool on wire rack.
