时晴时雨

最近的天气真恼人,时下晴来时下雨,变幻莫测。

要看天色做人,真是说得不错。

热烘烘的天气,人们汗流浃背,树木花草苦干,还是窝在家里不出门的好。

雨濛濛的天气,到处湿漉漉的,忙着收好衣服,还是窝在床上睡大觉的好。


人难做,

老天也难做呀!

Dessicated Coconut Muffins 椰丝杯蛋糕


My mum and I love snacks made from coconut. For example ondeh ondeh (a nonya snack make of sweet potatoe), putu mayam (an Indian food make of rice noodles that goes well with freshly grated coconut), Chinese tutu (a snack make of rice flour with grated cocconut cooked in gula melaka) etc etc. The list can go on & on.

However, my mum doesn't like butter and milk. Hence, when I make these little muffins using dessicated coconut, I made some changes to the original recipe from here. And for all you know, I accidentally omitted putting baking powder, thus, you can see that my muffins did not rise a lot, kinda tiny ...... Low fat evaporated milk has very mild taste, so my mum did not notice I do use milk in these muffins. WHEW!


Ingredients:
35g unsalted butter (i changed to using sunflower oil)
40g brown sugar
1 egg, beaten
50g dessicated coconut
50g plain flour
3/4 tsp baking powder (i accidentally omitted this!)
35ml milk (i changed to using low fat evaporated milk)

Method:
1. Preheat oven at 180*C.
2. Cream butter and sugar with electric mixer.
3. Add beaten egg in additions to Step 2, mix well.
4. Add dessciated coconut, mix well.
5. Add sifted flour & baking powder, then add milk. Mix well but don't overmix.
6. Spoon batter into muffin liners and bake for 25 mins till golden brown or when skewer inserted comes out clean.
7. Let cool on the wire rack.
Goes well with a glass of cold milk or a cup of aromatic coffee ..:-p

Chocolate Chips Muffins

Muffins are among the easiest items to bake. Yesterday, within half an hour, I churned out these soft and fluffy and yummy choc chips muffins. The original recipe used plain flour with baking powder & soda, but I changed it to using self raising flour, because I do not want to have so much chemical in my muffins. I also changed from using butter to sunflower oil, which I think is much healthier. The result was equally good. The original recipe is from here.

Japanese Cheesecake

Baked this cheesecake today. The result was a soft and light cheesecake which my DH said it tasted something like those sold in BreadTalk. Whew! A sigh of relieft as I thought it would be too cheesey because of the whole block of cream cheese I have added. Well, a little consolation for the long weekend ... :-)

Strawberry Craze continues ......

Strawberry again ... this time round is strawberry tart.

I have a ready-made crust sitting in my fridge, and arm with the half punnet of strawberries left from baking the muffins, I made some custard, and then put them together ... tada ... here's my lovely strawberry tart (beauty lies in the eyes of the beholder ... LOL).
The custard recipe is taken from a book borrowed from the library and is said to be low fat. Anyway, I double the recipe as the original recipe is for small tarts only.
Ingredients:
(This is what I used for 8" tart crust)
1 piece ready-made 8" tart
1 cup water
8 tbsps sugar
4 tsps lemon juice
2 tsps lemon zest
4 tbsps custard powder
4 tbsps cornflour
3ooml skimmed milk
Half a punnet of strawberries (halved them)
(recipe from: Tasty Low Fat Desserts, Seashore Publishing)
Method:
1. Put custard powder & cornflour into a mixing bowl. Add milk & mix well. Set aside.
2. Boil water, add sugar & cook till all sugar is dissolved.
3. Stir in custard mixture from step 1 in a slow stream under low heat. Stir continuously until it thickens. Add lemon juice and zest. Mix well.
4. Scoop step 3 tart filling into the ready made tart crust. Top with strawberries or any kind of fruits of your liking.
5. Refrigerate until set. Serve.

My breakfast

Recently, I bought a small bottle of McCromick Garlic Spread with herbs. This morning I used it for my garlic bread, and the taste was very good. My DH who doesn't fancy eating bread also loves it. I also make sambal ikan bilis sandwich. I love to eat this kind of sandwich very much. The sambal was bought from Kopitiam Foodcourt from a stall whom the stallholder made it herself. It can be stored in the fridge for sometime. Heat it up in the microwave oven and you can add to any of your favourite food. Yummyyyy ....





Strawberry Muffin

Nowadays, you can get very cheap and sweet Korean Strawberries from the supermarket. Only $2.45 per punnet (latest price). Isn't ita good deal? I think is a good news to all bakers who like to use strawberries to bake. Though these berries are easily perishable, but I can't help but to grap a few punnets every time I go to supermarket. Hence, today I used half a punnet to whip up some Strawberry Muffins.

Mango Pudding

When you have mangoes at home, what do you do with them? Peel and eat them, use them to bake a cake, make a mango milk shake, or make puddings of out these golden fruit? There are so many ways to use them, but I chose the latter option -- make puddings.
I used Rino brand mango flavour jelly crystal to make these puddings. Surprisingly, the result was very good.

Ingredients:
1 packet mango flavour jelly crystals (available from supermarkets)
400ml water
3/4 to 1 can of evaporated milk
2 medium size mango, cut into small chunks

Method:
1. Bring water to boil, add in the packet of jelly crystal, stir constantly until all crystals dissolved.
2. Add evaporated milk into the jelly mixture, continue to stir till the milk incorporated into the mixture.
3. Spoon mixture into jelly cups with chunks of mango inside. (use a teaspoon to remove unsightly air bubbles on the surface of the mixture)
4. Put into fridge to chill for at least 2 hours before serving.
