Pandan Yogurt Cuppies

Once again, one of my favourite snacks is back ~~ Pandan Yogurt Cake. This time round I baked in muffin cups, the taste didn't compromise though :-)  The recipe is from Little Corner of Mine.  Thanks again Little Corner of Mine.

笑口黑糖发糕 Smiling Brown Sugar Huat Kueh

发糕是华人在喜庆节日时,摆在神台上的糕点。但自己做来试试吃,也有一番风味。:-)

从没自己动手调配材料来做过发糕。之前做的都是买调好的发糕粉,这次在网上找到一个材料简单的发糕食谱,便做来试一试。效果还不错,还“发”得挺好的。做发糕最重要是要“发”,不“发”的话就不是好意头了。食谱是从这里取得的,谢谢妮可斯的分享。妮可斯说,要发糕“发”的好,一定要用比较硬质地的松饼杯子(muffin cases),如果用较薄的纸杯,就不能“发”得漂亮了。看这里

一行禅师

身行幽径上,心可达十方。

步步微风起,步步莲花香。

行禅就是在你行走之际来实行禅修。 

在风光旖旎(yǐnǐ )的地方,我们独自漫步,或与朋友同行。行禅给人带来快乐。

行禅就是没有目的的行走,尽情享受行走的快乐。目的在脚下,在享受每一步的快乐。所以要抖落凡尘,不想过去,不想末来,只享受当下一刻的快乐!

行走时,你可以牵着孩子的手,把自己当作地球上最快乐的人。我们虽然都会走路,却常常步履匆匆,把焦虑和痛苦印在了大地上。如果能平和地迈出第一步,我们就能为人类的和平和幸福迈出第二步、第三步、第四步、第五步。

我们经常心猿意马、思虑万千,将自己陷入无明的世界。如果小路能够转化成为禅观的土地,我们抬起的每一步就在迈向彻底的觉悟。呼吸和脚步相和谐,心灵自然而然地平和,安祥和喜悦同时强化,全身洋溢着宁静的能量。那时,我们可以说,“步步微风起”。

学习以平和的心来到达自我解脱的方式走路。这并不难,你就能做到!只要有些许程度的专注及向于愉悦的意念,任何人都能做到!

佛陀常被艺术家表现为端坐莲台、安祥宁静。也有的艺术家描绘刚出生的佛陀足下莲花朵朵盛开。

如果我们的脚步没有焦虑,平静而喜悦,那时,我们的每一步都会使大地绽放莲花!

JUST DO IT

These few weeks have been "lazy" weeks for me, don't feel like doing anything. Mood swing? Menopause (too early la!)? Weather too hot?  Whatever reasons, I just don't feel like doing anything, even my favourite hobby, baking.  Sigh .... what can I do?  

Maybe when June school holiday starts, my mood will be better, because sch exam all over!

There's only one solution --- pick up my lazy bones and JUST DO IT!...................... I love this Nike slogan :-)

Hot & Spicy, Round & Sweet :-)


My hubby, who seldom cook in the kitchen fried 2 sunny side up for tonight's dinner. I was out when he was doing it.
Thank goodness he didn't mess up my kitchen ... LOL
Well, he has done a very good job. You see, these 2 eggs were fried to "near perfection". hahahaha ...... Thank you dear for being so SWEEEEEET!
I cooked some curry vegetables this morning before I went out to work. During evening time, dh cooked some white rice, also "near to perfection", and fried the 2 eggs.  And that's our dinner.

I love Nonya Kueh --- Kueh Dadar

I love to eat nonya kueh. However, till now, I only know how to make Kueh Dadar & Ondeh Ondeh. This afternoon, to consume the packet of expiring grated coconut, I made some Kueh Dadar again. However, I was quite happy with the result. I can say this is by far the most successful Kueh Dadar I have made. The skin for wrapping the filling was just the right taste and colour. I did not really measure the ingredients used, I just agak-agak (means estimate) only. :-p Previously, I followed the measurement of the ingredients to the T, but still did not yield satisfied results. Now I know, guts feeling can be of good used.
Recipe extracted from Indonesian Delights Desserts & Snacks (特色印尼糕点)
Ingredients:
Batter
250g    Plain flour        >   For these 2 flours, I only estimated the amount
50g      Tapioca flour   >   You can follow this exact measurements.
3 nos.   Beaten eggs
300ml  Coconut Cream (I used 200ml only)
2 Pandan leaves (screwpine), blended & strained (I used a few drops of pandan paste only)
500ml  Water (I find this amount of water is too much, I used only about 400ml)

Filling
100g    Fresh grated coconut (I used a packet of ready-shredded coconut sold at supermarkets)
300g    Gula melaka (Indonesian palm sugar) (I used about 1 and 2/3 small cones)

Method
1. Crush gula melaka. Cook in a pot. Add grated coconut and cook until sugar dissolves and it thicken into a batter.
2. Combine eggs, coconut cream, water and juice of pandan leaves (or a few drops of pandan paste).  Fold in sifted tapioca & plain flour. Stir until it thickens into a batter.
3. Add 1 tsp of oil into a flat-bottomed non-stick pan.  Add a scoop of batter and fry into a pancake.
4. Add filling from Step (1) onto pancake.  Roll up like you roll a spring roll.  Serve.

Kimchi Fried Rice 韩国泡菜炒饭

I don't like to eat kimchi on its own, but I love to eat kimchi fried rice. Funny huh!


Added in some Taiwan sausages which actually enhanced the taste of the fried rice. Yummy!

I love my family

I grew up in a modest family of four, dad, mum, brother & I.  We are a close-knitted family.  Our parents love us a lot, because there are only 2 of us.  Since young, my relationship with my brother has met with many ups & downs.  This was so because both of us were quick tempered and don't like to give in to each other.  Hence, many a times, we ended up with big arguments and don't talk to each other for days.  However, as age is catching with us, we are now enjoying a very harmonious bro & sis relaitionship.  Especially when after I got married and moved out from my home, then I realised the importance of keeping a vibrant relationship with my family.  I called my mum everyday on the phone, though sometime just to ask if she has eaten, or talk to my dad to see if he catches enough rest etc.  Of course, my brother who loves to watch soccer.  I will chat with him about soccer over the phone.  And when my tuition assignment is near my mum's place, I will definitely stay there for dinner.  Family ties are hard to be broken.  I have to take initiative to keep such close-knitted relationship.  There will be no one esle except my family who will accept me the way I am. They will be the closest to my heart till the day I depart.
Two weeks ago was my brother birthday.  I gave him a treat at a western restaurant as I recommended the premium ribs to him.  It was indeed a good choice as my brother enjoyed it very much.  I'm one happy bird :-)   As for me, I love cheese, thus I ordered a cheesey chicken chop.  However, I find that it  is too heavy a meal for me.  Nonetheless, the tasted was great.
Hereby,  wanted to wish my brother a healthy and prosperous year.  I love you my dear Brother!
