I notice that nowadays food bloggers like to "award" each other with different kinds of awards.  There are Cheer Leading Blog, Sunshine Award, Blog with Substance etc. etc. Some even have ranking (排名).  Oh my ... So fanciful awards indeed!  I know all these awards are there to recognise food bloggers of their effort and to encourage them to continue their passion in baking, cooking and culinary exploration.  It is indeed heart warming to see such happenings even in the virtual world of blogging.  Cheers to those who pass awards to other bloggers.  These acts of kindness will help food bloggers to go a long way.  Keep it up! :-)

My First Cupcake

I have baked many muffins before but this is my first cupcakes.  In fact, I find that muffins & cupcakes have not much of a difference. However, from this blog and this blog, I now know the differences between muffins & cupcakes.  Upon careful tasting of the both, one can really taste the differences.
I also found out that muffin cannot be overmixed, but cupcake is ok to mix it thoroughly, of course not overdo it.  I hope my findout is correct. :-)

Anyway, I managed to bake a good batch of cupcakes this time round.  I will try to bake other flavours in the near future.  It is quite easy to bake. This time I baked vanilla flavour with Nutella as the filling. However, I don't why the Nutella cream sank to the bottom of the cupcake when I cut open to see. Anyone can advice me?  Many thanks. :-)

Fudgy Brownie in a cup and My Easy Peasy Fried Rice

Baked some brownies 2 nights ago. Normally I baked it in a square pan, but this round I tried to used muffins cups to hold the cake, well, it turned out very well. :-) The brownie was really fudgy and with a bit of crust on top. Yummm ... I kept few till next day and ate it with Vanilla Ice Cream, wow it was really good! Try some .......

Cooked for myself some fried rice for lunch.  I believe most of you know that to have a plate of fragrant fried rice, it is best to use overnight cooked rice, whether white rice or brown rice. It's recommended to use overnight left-over rice for fried rice because it is firmer than freshly cooked rice. This will prevent rice sticking together while stir frying.  Fried rice is a great way to utilize various leftovers or items in your refrigerator. A timesaver is to use a handful of diced, frozen mixed vegetables - the peas, carrots, etc. add color, nutrition and flavor in seconds.  For my fried rice, I added lap cheong, a.k.a Chinese sausages and shredded lettuce.  Taste it with soy sauce, fish sauce, pepper, sesame oil, garlice. And a plate of fragrant fried rice is waiting for youuuuu...

姜葱炒猪肝 ~ 皮蛋瘦肉粥

昨天,我们很早就吃晚餐,因为先生要出门办事,因此把晚餐提前到下午4点多就用餐了。我煮了很简单的一餐(我向来的作风),姜葱炒猪肝和皮蛋瘦肉粥,容易消化。瘦肉粥我熬了大概两个小时。用料方面很简单,瘦肉和皮蛋。只是煮粥的米淘洗干净后,要用油(2大匙)和盐(1.5匙)先腌半小时,到真正煮粥时,什么调味料都不必放了。而且煮粥的水也要充足,煮出来的粥才会绵绵的。

炒猪肝更容易了。材料是青葱、红辣椒、猪肝、蒜茸和姜丝。调味料是:蚝油、麻油、花雕酒、糖、胡椒粉和太白粉。把洗净、切片的猪肝用调味料腌半个小时,然后烧热油锅,爆香蒜茸和姜丝,之后倒入腌好的猪肝,快速翻炒至熟,投入青葱和红辣椒,即可上桌。

这道菜很下饭的哦,记得多吃两碗!:-)

为何乳癌最常发生在靠近腋窝(arm pit)的地方?

不久以前,我参加了一个由TerryBirk赞助的“乳癌防制研讨会”,在最后的问答时间里,我提出了一个问题:“为什么乳癌最常见的区域在靠近腋窝的地方呢?当时没有人可以回答我的问题,可是最近我收到这封信,我发现它解决了我当时提出的问题。一位朋友将这封信转寄给我,我把它给一位正在接受化疗的朋友看,她说在她最近参加的互助团体中,她也正好学到这件事情。那就是“导致毒素累积成恶性肿瘤的原因是---剃或拔除腋毛。


最主要的理由是:人体有几个主要排除毒素的区域,包括了膝盖后方关节,耳后,鼠蹊(groin)及腋窝。它们排除毒素的方法就是“流汗”。腋毛会帮助汗水顺着腋毛流出体外,若剃或拔掉腋毛,因而阻止了我们身体的毒素从腋窝排出,但是这些毒素并不会因此而消失,反而会因为无法排汗而储存我们腋下的淋巴结,几乎所有的乳癌都是发生在乳房外侧上方的区域,那正是淋巴结所在的地方,可看编号01的照片,它刚开始生肿瘤的地方就刚刚好离腋窝不远,不久就会蔓延到整个乳房,你若再看清楚,她腋下也没有毛,所以她也是有剃掉才会长瘤。


男人之所以比较不会得到乳癌的原因是因为他们从未剃掉腋毛,这些毒素就被阻绝在他们的腋毛之外而不会直接接触到皮肤。可能你会问男人每天剃胡子为何不会得乳癌,因下巴并不靠近乳房,也没有淋巴组织。不但如此,在剃毛时剃刀可能会割伤皮肤,女人如果在剃毛之后马上使用防汗/止汗用品,更会提高罹患乳癌的机率,因为这样皮肤上那些细微的伤痕使得止汗用品的化学物质可以直接进入到腋窝。


就算你不搽防汗用品,在剃毛或拔毛时,也会暂时使腋下毛孔扩张,使细菌更容易进入,有腋毛也会帮助阻隔细菌直接接触到腋窝,若是你觉得不剃腋毛不雅观,但是当你看到所附上的照片后,你就会觉得不剃腋毛或乳房生癌那一种看起来更恶心了。西方洋人妇女比我们华人女性更注重仪表,但是现在她们也开始不剃腋毛了,照片上也可看到她们照样穿着无袖衣服照样出门,因为她们现在也意识到不美观总好过患上乳癌。


请你将这个讯息转寄给你认识的女孩子,或你的姐妹,尤其是你妈吗,40岁以上的妇女更加不可以剃,因为这个年龄层患癌风险更加高,因为乳癌的罹患率已经高的惊人,这样的认识或许可以挽救许多的生命。请将此信转寄给你生命中所有的女人:母亲、女儿、姊妹、伯母阿姨以及朋友。


一种罕见的新种乳癌于十一月被发现。一名女士的乳房如同哺乳中的妇人般起了湿疹(eczema)。她的乳房X光摄影片并没有显示出任何代表硬块的阴影,因此医师只开了一般的抗生素以避免进一步的细菌感染。上了两次医院后病情却持续恶化,医师于是再度请她去照乳房X光摄影。这回阴影出现了。切片检查后,发现了急速复制中的恶性肿瘤细胞。为了减缓细胞复制,先是化疗,接下来乳房切除,然后又是一整个疗程的化疗以及放射线治疗。九个月的密集治疗之后,医师们保证她恢复健康了!


之后整整一年的时间,她过着最充实的生活,然而这批顽强的癌细胞竟转移到肝脏!四个疗程之后她决定舍弃有着许多副作用的化疗,找回生活品质。她详细的计划最后五个月所有的生活细节,最后的几天在吗啡的麻醉效果下,安祥的走了。她在临死前留下了这封讯息,希望转达给所有的女性朋友们!女士们!请随时注意身体细微的变化,并且,有任何不正常的情形时,请尽早寻求医疗协助!


乳房外柏哲氏病:这是一种罕见的癌前病变,以湿疹型态发生于乳头及乳晕上。湿疹后来会形成一片边缘有硬皮的伤口。我不曾怀疑这可能是癌症,但癌症找到了我。


我的乳房并没有任何异状,我看医师唯一的理由是因为这偶尔会发痒?疼痛,十分恼人又丑陋的湿疹。家庭医师开给我的任何乳膏都无法除去它;皮肤科医师先前给我的眼周皮肤病药物也无法治好它。


让似乎让人感到不安,但无法使我联想到癌症的到来。我怀疑许多的女性朋友们都不知道乳晕及乳头上的湿疹可能象征乳癌。(我一开始的症状仅是乳头上冒出一个小痘子)。柏哲氏病之所以可怕的理由之一,就是因为:乳头上那似乎无害的细菌感染或是发炎,却在延误就医后一发不可收拾。


有哪些症状呢?


1.乳头有持续的红肿、不明分泌物以及导致搔痒及灼热感的硬皮剥落。(我一开始的时候除了一边乳房有硬皮剥落外,没有其他症状)。


2.乳头上有无法愈合的伤口。(我当初的伤口分布在乳晕,乳头中央并且有白色浓稠分泌物)。


3.通常只有一边乳房被感染。这怎么判断呢?您的医师会在触压检查以后,建议您立刻做两个乳房的X光摄影。因为正常皮肤炎的症状为红肿、硬皮剥落以及不明分泌物,所以医师只有在症状仅产生于单一乳房时,才会怀疑癌症的可能性。届时进行发炎部位的病理切片,就能找出病因。请严肃的看待这封信,并且尽你所能的转寄给亲朋好友;它可能拯救许多人的生命。


我的乳癌在无数化疗、28个疗程的放射线物理治疗以及持续服用抗雌激素后,依旧转移到骨髓。如果能早点诊断出乳癌,说不定就不会发生这种事情了...。致所有的读者:女性同胞不知道柏哲氏病是非常让人难过的消息。为了帮助四周所有的女人,请将此讯息转发给周围的人,你可能会因此挽救一个生命....。


另外还有一条重要资讯请注意:

面纸(FacialTissue)含有滑石粉尘会致卵巢癌....你不可不知面纸含有滑石粉尘会致卵巢癌(ovarian cancer)。这不是卫生纸(ToiletPaper)与面纸(Tissue)差在哪里(屁股上)的问题喔!以面纸取名为面纸,因为只能擦脸。卫生纸取名为卫生纸,就是要擦了会卫生的。

以下资料提供:董事长秘书杨秘书以前曾看过有关卫生纸与面纸的讨论。一直觉得有些疑问,所以我终于请教本公司研发部陈经理得知卫生纸与面纸的制作差异:两者均是原生纸浆制作,均有经过消毒程式,卫生纸未再加工添加任何添加物。而面纸加工添加入湿强剂,在水中不易断裂,所以不适冲入马桶;又添加了柔软剂及活性剂,纸粉(粉尘)多。你若不信可将面纸在空中抖几下,你会看到很多纸粉掉出来。


一般人都认为面纸纸质较好,就是因为添加了这些东西加工,也使得成本居高,当然售价也较高。因此陈经理解释说,面纸不能当作卫生纸使用,尤其女孩子使用面纸当替卫生纸来擦拭下体。所以就算厕所里没有放卫生纸,也千万别用面纸来檫阴部。要千万注意,阴部皮肤敏感的人会有不适反应,也会导致卵巢癌。陈经理还说,他们本身懂得这些原理的人,自己家里都少用面纸,尽量全面使用卫生纸。

“一次晚餐”的妇女

看来我是一个“一次晚餐”的妇女。怎说呢?
我一个礼拜才起炉灶做饭一次,也多数都是晚餐,所以不就是“一次晚餐”的妇女啰!
我的晚餐也趋向简便为主。就像今晚的一餐,也是简简单单的——肉、蛋、汤。
DH说这道蒸排骨很好吃,连汁也不放过。其实,调味料方面我也是agak-agak(estimate)的。
记得刚开始学煮菜时,还学那位名厨方太那样,拿了量匙量调味料,现在想起也觉得好笑。
你说做菜时,有时是不是要靠感觉的呢?在我来说,很多时候是这样。:-)
豆豉蒸排骨用料:
软骨、豆豉、蒜头、姜、小辣椒
调味料(自己斟酌用量):
盐、太白粉、生抽、麻油、生油、糖、花雕酒
做法:
洗净软骨,吸干水分。
剁碎豆豉、蒜头、姜、小辣椒
软骨用盐和太白粉抓一抓,再把豆豉、蒜茸、姜茸
和所有调味料加进去,拌均匀。腌制大概半个小时。
把一锅水烧开,把腌好的软骨放进去,大火蒸7-10分钟,
撒上一些青葱或小辣椒茸,即可上桌。



这辣椒是我做过最辣最辣的一次。真的够力,辣到我的嘴唇都
麻掉!我想是辣椒的品种,平时也是买这种辣椒,也没那么辣。

Genting & KL ~ Day 3 & 4

Day 3
After breakfast at First World Hotel, we went back to our room to pack our luggage to prepare for checking out at 12pm. 
We took a bus to Kuala Lumpur from the bus terminal at the hotel.  After one hour of rounding the mountain, we finally reached KL. After which we took a LRT to reach our destination, Plaza Rayak Station, where Jalan Petaling (a.k.a. Chinatown茨厂街) is.  However, bad luck was knocking at me. As I was walking on the pathway which was a bit slanting, I didn't notice it was kinda slippery and there and then, I slipped and hurt my ankle.  It was quite pain so hubby insisted on taking a cab to our hotel, D' Oriental Inn at Jalan Petaling.  This is the LRT we took to Plaza Rayak Station.
This D' Oriental Inn is worth staying in terms of price and location.  Once you step out of the hotel main entrance, Jalan Petaling a.k.a. Chinatown is just in front of you.  Food and shopping are just so accessible. The check-in time is 2pm but we reached there much earlier about 11.30am.  Hence, we decided to go to Sungei Wang at Bt Bintang to find the restaurant that my dad and I had our meal many years ago when we were here. The restaurant is called Esquire Kitchen大人餐厅.

When we reached there, we took quite some time to look for it as we forgotten which level it was located.  Nonetheless, after much searching, we finally found it.  My dad was so elited when we found the place.  As it was lunch time, there was a small crowd in the restaurant.  However, we managed to get a seat.  We had a set meal of 3-4pax at RM38++ with 3 dishes and a dessert, quite worth it. We ordered the Do Bo Meat (东坡肉)  seperately, as my dad likes this dish very much. The food was so yummy that my dad exclaimed that in Singapore such tasty dishes are hard to find, which I seconded his view.

After the delicious lunch, we took a walk in Sungei Wang and nearby shopping mall.
It was drizziling outside. But we didn't bother by the rain and continued walking. In Lot 10, there was this exhibition of artistic photography like the pictures below.  I asked my dad and hubby to be my models.  :-)  They were very "obedient" and posed for me. haha...
Enough of shopping, we took a cab back to the hotel.  Dad went back to the hotel room first, while both of us continued to walk around Jalan Petaling (a.k.a. 茨厂街).

For dinner, we ate at nearby Zhi Char stall in the back lane of Jalan Petaling.  Don't underestimate such stalls, the taste of the dishes is comparable with those restaurants out there.  All in all, we paid RM58 for the dinner which consist of 3 dishes and 1 soup.  I didn't take pictures as I was busy mouthing in the yummy food. 

After dinner, we went shopping again.  Tonight, all of us bought something for ourselves. Watches, bags, T-shirts, shoes etc. After which we went back to the hotel room and called it a day. Well, a tiring but fruitful day. 

Day 4
Good time pass very fast. It's already the 4th day of our short getaway.  Early morning, we went to the hotel cafe to have our breakfast. Simple yet delicious breakfast. After breakfast, more walking, and walking.  It's quite interesting to look at how the morning scene in this famous Chinatown.

Our flight was scheduled at 7pm in LCCT (Low Cost Carrier Terminal).  Hubby said it was better for us to get to the airport earlier to avoid traffic jam during knock off hours at 5pm. Hence, after morning walk and somemore food at nearby coffee shop, we headed back to the hotel to pack our bags. At 3.30pm the taxi driver we have arranged to pick us up came punctually.  We reached the airport at about 4.40pm. Yes, it took us more than an hour to reach there.  It's quite a long distance.  We paid about RM80 for the taxi fare.

At the airport, we were surprised to see SO many people, really so many.  To serve this crowd, there are many check-in counters too.

We were very tired by then, so we just found a cafe and sat down to rest till the check-in time.
Not long after that, we were in the plane, flying back home...... At 8pm, we touched ground at Changi International Airport. And home sweet home we did.

Genting & KL ~ Day 2

At about 8am, we went to the hotel cafe to have our buffet breakfast.  On our way there, we took some photos.
It was so very crowded at the cafe. Many tourist and hotel stayers queued up outside the cafe waiting to go in. It was quite a sight! The cafe was very spacious and divided into sections. Though the number of eaters were numerous, food was more than enough to feed hungry tummies. I didn't bother to take pictures as I was too busy "searching" for food. :-B  My dad and hubby were very busy as well, so much to look at and so much to savour ... Yum!

After breakfast, we walked around the hotel vicinity to digest our food. Three big round tummies .... LOL ... and mine the biggest! XOXO ...

After few hours of walking, my dad, an 85 years old gentleman, said he wanted to rest. Hence, I accompanied him back to the hotel room, so that I can rest too. (excuse of being lazy .. ). In fact, before we went to the hotel room, I brought my dad to a very nice Chinese food centre at the centre of the hotel mall to have a cuppa and also to rest our legs. I had a good time with my dad, talking and reminiscing about our trips we had taken to Malaysia when I was still a little girl. To my surprise, my dad's memory is even better than mine.

My hubby went to the Casino alone to "recover" what he had lost the previous night. (at the end of the day, he lost even more) ... hahaha ... serve him right for being greedy.. (a very bad wife hor).

In the afternoon, we went to a restaurant at the middle of the mountain, Mushroom Farm Restaurant. My hubby's Malaysian friend is working there as a Chef. He has asked us before to go and visit him whenever we go to Genting. Therefore, we made it to the restaurant this time. Last year, same at Genting, we didn't make it as time was too rush for both of us. He was very generous to give us a treat. Not only he paid for the lunch, he cooked for us as well. Really thanks Uncle Leong (that's how we addressed him) for being so hospitable. Here are the yuumy dishes he cooked for us.

The dishes were so delicious that 3 of us finished them all. We will come again during next trip if it is still there. This is because according to Uncle Leong, the place might be returned to the mountain owner for other development. Though this is a simple restaurant, it is quite profitable. It can earn up to RM30,000 a day during school holidays.

Hence, giving it up will be quite a pinch to the restaurant owner. This is how the restaurant look like.
After lunch, Uncle Leong invited us to visit the Lingzhi (a.k.a.灵芝or Ganoderma) farm which is located behind the restaurant. It is a rare chance to visit such a farm in Malaysia, not to mention Singapore.  Hence, without hesitation, we went straight to the farm. We thought it would be a small scale farm, but it turned out to be quite big.  There are 2 such farms opposite each other. That's how the farm look like.
The farm is cool and damp, which is good for growing Lingzhi. However, it seemed that no one has gone in for quite sometime, as there were spider webs here and there. Quite an interesting experience to visit such a farm.

After the lunch, we went to the hotel arcade to play some games.
Hubby tried to "ride" on the motorbike and came in 8th place! :-O
He is an expert in car driving, but not motorbike.

At night, we had our dinner at Kopitiam.  Yes, the hotel has a Kopitiam in the building.  It is very much like our food court in various shopping malls.  The food they sell is very delicious and not expensive at all. Happily eating away, I forgot to take pictures of the food we ate. zzzzzzzzzz....

Dinner over, we took a walk again.  The air at night is cooler.  Genting Highland has a higher temperature than what we had experienced last year November. At night it is between 16-20*C.  In the afternoon, it can shoot up to 29*C!  Blame the global warming?  Well, I think all human beings who stay on earth have to play a part.
