千万不要以为孩子小,就不需要像对待成人一样尊重他;千万不要以为孩子大,就不需要像对待婴儿那样爱护他。

家长不会爱孩子,因为他们不知道在每个孩子心灵深处有两个孩子,一个好孩子,一个坏孩子。在欣赏中,好孩子被唤醒,在抱怨中,孩子觉得自己是坏孩子,只能缓慢而痛苦地爬行。

父母要真正学会赏识孩子,首先要学会赏识自己。

庄稼长不好时,农民从不埋怨庄稼,相反,总是从自己身上找原因,孩子学习不行时,许多家长却一味地指责,却不在自己身上找原因。

哪怕天下所有人都看不起你的孩子,做父母的也要满含热泪地欣赏他,拥抱他、赞美他、为自己创造的生命而永远自豪。

Steamed Pumpkin Kuih蒸金瓜糕

第一次做蒸金瓜糕,但并不是很成功。虾米和冬菇炒焦了点儿,黑乎乎的。气死我了!都怪自己没把火候看好。还好,味道还不错,挽救了这糕被倒进垃圾桶的命运。(^^)食谱可参考这里.谢谢NancyMommy的分享。

Pumpkin Green Bean Sweet Soup金瓜绿豆甜汤

Pumpkins are rich in Vitamin A and potassium. They are also high in fiber. The conclusion you should now be reaching is that they are therefore good for you.

From a medicinal standpoint, pumpkins have been used for a variety of ailments:

1) They were once recommended as a cure for freckles - aha, women take note :-)
2) They were used as a remedy for snake bites - ouch! it hurts ...
3) The seeds help avoid prostate cancer in men - oho! men's glad tidings!

As for me, I used Pumpkin in its simplest way. Cubed it, cooked with green beans, to become Pumpkin Green Bean Sweet Soup 南瓜绿豆甜汤.
Green beans, which are also known as Mung Beans, contain rich quantities of Vitamin A, B, C and E. They are also known to be an excellent source of many minerals, such as calcium, iron and potassium.

The bean is popular as the perfect food for reducing weight. It is recommended as a food replacement in many slimming programs, as it has a very low fat content. It is a rich source of protein and fiber, which helps one to lower the high cholesterol level in the blood system.

The high fiber content of mung beans yields complex carbohydrates, which aid digestion. Complex carbs are also effective in stabilizing blood sugar and prevent its rapid rise after meal consumption, apart from keeping body’s energy at a balanced level. Those who suffer from diabetes or high cholesterol are recommended frequent consumption of mung bean.

In Chinese medicine, mung bean sprouts are considered as a cooling food (凉性食物), containing anti-cancer properties. Herbalists use them for all hot, inflammatory conditions, ranging from systematic infections to heat stroke and even hypertension.

Especially living in Singapore with such humid weather, it is good to have mung beans in our diet.   Mung bean is great in making dessert, e.g. Green bean cake, green bean sweet soup etc. Mung bean sprout (绿豆芽儿) can be stir-fried with chives to make a healthy and tasty savoury dish.

銅鑼焼きDorayaki

小时候,有一个卡通片是我喜欢看的,那就是“小叮当”,也就是Doraemon哆拉A梦。据说这个卡通人物(其实是一只机器猫)很喜欢吃“銅鑼焼き”。

铜锣烧的小知识:
铜锣烧,又叫黄金饼,因为是由两块象铜锣一样的饼合起来的,故而得名铜锣烧。是一种烤制面皮、内置红豆沙夹心的甜点,也是日本的传统糕点。日本卡通人物哆啦A梦和哆啦七小子的最爱食品。 日文写法:どら焼き、ドラ焼き、铜锣焼き。罗马拼音: do ra ya ki

前天,我看到Esther(x3Baking)做了铜锣烧,看起来好好吃哦,所以我也有样学样地做起这个我最爱的卡通人物爱吃的小食。其实不难做,只是在控制火候方面还要下点儿功夫。有好几片的饼皮颜色不均匀,呜呜呜,难看死了。

Durian Pancake 榴莲煎饼

The Chinese word for Durian, the king of fruits, is Liu Lian, but my Lian can't be typed out with a 木字旁so I used 莲花的莲.  To me durian is also like lian hua, Lotus flower.  At least to me :-)  So nice, so beautiful, so sweet ...... I love it! 

Well I know, some of us don't like Durian because of the smell.  But hor, to me the smell is heavenly! Though I know durian is very high in sugar content, that's why diabetic patient can't eat this fruit or only limit to one seed at a time, I still can't help but to make it into Durian Pancake.  I found out that after chilling the pancake with durian filling, the filling don't taste as sweet.  So I allowed my mum and dad to have one each.  I don't let my folks have too much of high sugar content food or fruits.

I used the same pancake recipe which I used one week ago.  My hubby bought 2 boxes of durian and I just mashed them up, as simple as that.

Nature just outside my corridoor

It was a rainy morning.
My pomegranate plant was swaying in the wind.
The red fruits were dripping with rain water.
So beautiful, so natural.
And my little kumqat plant also glittering with rain water.
It is as if the plant is drinking, and drinking.

Nature, is just around us.
Open our eyes and there it is.
So soothing, so natural.
Let me have a piece of nature in my life and beyond.

Pancake Roll, my way

I have a big jar of Skippy Chunky Peanut Butter sitting on my dining table. Thought of ways to use it, and finally decided on this simple recipe from 星厨房(Star Kitchen). Thank you 星厨房for this simple yet tasty recipe! She made it into rolls like Kueh Dadar, but I simply roll it up without folding the edges. The filling she used is for Min Jiang Kueh, i.e. crushed peanuts and sugar.

It is really simple you must try it.  Besides using peanut butter, I also used some Nuttela Hazelnut spread. Simple, tasty, fulfilling ....

Ingredients:
1 no.     egg
180g     flour
200ml   evaporated milk
200ml   water
1/2 tsp  salt
1 tbsp   oil

Filling:
Peanut & Sugar or any filling of your choice

Method:
1. Blend all ingredients together.  Strain the batter and set aside for 15 mins.
2. Using a non-stick pan,  pour a scoop of batter into the pan and tilt it to let the batter form a thin crepe.
3. Heat both sides of the crepe over medium heat till cooked. Do not heat too long.
4. Repeat steps 2 & 3 until all batter is used up.
5. Spread the filling onto the pancake and roll it up.

My love for cream cheese

Yes, yes, yes, I know what you are going to "warn" me.  Cream cheese is very fattening!  However, I have a soft-spot for cream cheese eversince I first tasted this lovely stuff.  Well, in fact, I don't use it for my baking very often.  Just once in every few months. ;-p

Today, I baked with cream cheese again, but with light cream cheese instead of the usual Philly full cream cheese.  Psychologically, I feel "lighter" eating light cream cheese (what a good excuseeeee). 

Anyway, I decided baked this cake because I wanted to use up my expired light cream cheese.  From some blogs, I know that expired cream cheese can be used too as long as the cheese is always in the fridge and not in and out of it.  Thus, expired dairy products, except MILK, can be used after their expiry date. Even expired butter can be used too.  However, if you have little kids at home, then better don't use it or their little stomach cannot take it.  Of course, it is better to use up all dairy products before the due date for safety of the family.

The cake tasted very good but my cream cheese layer was nowhere to be seen. Rather, it became like sort of a marble cheese cake.  So shall it be, and I shall name this cake as marble cheese cake (the top portion only) ... However, the top portion cracked! So sad :-{  I should have adjusted the temperature to 10°C lower.
Ingredients:
Mixture A
250g     Philly Light Cream Cheese
60g       Sugar
1 no.     Egg

* Beat cream cheese & sugar till light and fluffy. Add in egg and stir till well combined. Set aside.

Mixture B
180g    Butter, rm tempt
150g    Sugar
3 nos.  Eggs
3 tbsp  Cocoa powder
120g    Self Raising Flour (I accidentally used Plain flour, so I added 1 tsp of baking powder & 1/4 tsp of baking soda)
1 tsp    Baking powder

* Grease a 7" round pan or square pan. Preheat oven at 180°C.
* Beat butter & sugar till light and fluffy. Add in eggs one by one, stir well after each addition.
* Sift all dry ingredients together to butter & egg mixture.
* Pour half of Mixture B into the prepared cake pan, then pour in all of Mixture A, lastly pour the  
   remaining Mixture B to cover Mixture A.
* Bake for 45-50 mins or until the cake is set.

*** Oven temperature and baking time are for reference only.  Adjust accordingly to suit your oven.

Fruit Pastry Cake & Ice Cream

I took few days to finish my pastry cake, though I have given almost half to my neigbhour.  Reason being, my DH only ate a little as he is not a cake person.  Hence, ended up I have to finish the rest on my own.  Well, I don't like to eat it plain, so I topped it up with 2 scoops of chocolate ice cream. Surprisingly, it tasted very good.  Subsequently, I ate up all the cake having ice cream as my accompliment.

******************************************************************************************* 2 days ago, I made some Steamed Red Bean Cake.  The taste itself was pretty good, the red beans were kinda softened but still can bite.  However, I forgotten to grease the moulds, hence end up my product came out uneven.  Haiz ... What a forgetful person am I!  My recipe is extracted from "步步糕粿"(Kueh Flavour) by Chef Wong Kim Meng.
Ingredients:
150g     Rice Flour (粘米粉)
150g     Sugar
5 pcs    Pandan leaves (screwpine)
1 drop  Alkaline water
100g    cooked red bean

Method
1. Mix rice flour with 280ml water to form batter.
2. Cook sugar with pandan leaves & 150ml water until it boils.
Pour batter into syrup. Add 120ml water & alkaline water.
Remove pandan leaves.
3. Preheat Hong Kong cup cake moulds or small cups (greased them
before use).
4. Pour batter into it. Place 1 tbsp of cooked red beans in each mould.
Steam over high heat for 15-20 mins. Serve.



With the remaining red beans that I have cooked, I made some red bean soup (didn't take any photo) and with the remaining red bean soup, I made it into Red Bean Soup Ice Cream using the ice cream mould.
