Seri Muka

Many bloggers said that one of their favourite Malay kuih is Seri Muka. What is it?  Neh! The one that bottom layer is glutinous rice and top layer is a kaya-like kuih. Got it? :-)

And here is my version which is not really nice to look at but good to eat .. hehe .. Before making the kuih, I thought it is not too easy to make, but now I know, it is very simple and involve only a few ingredients.  If you are a fan of Malay kuihs, give this a try. Sedap!!

I got the recipe from Table for 2 or more. Thank you Wendy for sharing the recipe. Her kuih was very nicely presented. The top part of her Seri Muka was so even not like mine, just like those holes on the surface of the moon :-p 
All because I did not follow instructions clearly when steaming the kuih, should use medium heat but I used high heat for the first few minutes. Haiz ... Remember friends, must follow instructions, don't be like me... blur queen ...
Taste wise, it is full of pandan flavour.  My DH was lured by the smell of the kuih and sneaked into the kitchen wanting to try the kuih while it was just brought out from the steamer.  However, is kinda too sweet for me. Next time must remember to reduce 2 to 3 tablespoonfuls of sugar from the recipe. The texture of the glutinous rice is just right, not too hard not too soft. But the top kaya-like layer is a bit too soft. Must remember to add 1 to 1.5 more heaps tablespoon of flour or can add 1 tbsp of corn flour so that the texture will be firmer.

鲜虾水饺汤面&黑木耳香菇蒸鸡

冰箱里的碎猪肉已“躺了”一段时间,是时候派上用场了~就来个鲜虾水饺吧!这次我还在馅料里加入了马蹄肉青葱来增加口感,马蹄肉也使水饺更鲜甜,咬下去很爽脆哦!

汤底呢,我是用了干贝或广东人说的瑶柱来熬,效果“非同凡响”。我说“非同凡响”是因为我的另一半连续吃了7个水饺,把汤也喝光了。我从来没看他这样吃过。哈~他说他会这样“失态”,全因为我惹的祸。干我何事呀?是他自己贪吃嘛,还赖到我头上来!:-P
除了水饺,我还蒸了一道鸡肉来配,这道黑木耳香菇蒸鸡是我第一次烹制,成品还真不赖(哎哟,快变老黄了)。

我把切下来的菜头浸在水里,看看,很漂亮吧,好像朵朵玫瑰花。我看过有些人还用这些菜头来作画,把菜头轻轻压在颜料里,然后印在画纸上,就成了一副美丽的图画。

中秋节祝语

一年一度的中秋节又降临了。

中秋,顾名思义就是在有四季之分的国家里如中国,已进入秋天的中旬了。中秋节也称为仲秋节,团圆节,八月节等,也是仅次于春节的第二大传统节日。

中秋节美食首推月饼,其起源有多种说法,在这里就不加以说明了。月饼象征着团圆,是中秋佳节必食之品。在节日之夜,人们还爱吃些西瓜等团圆的果品,祈祝家人生活美满、甜蜜、平安。

中秋节,有许多的游戏活动,首先是玩花灯。中秋是华人三大灯节之一,过节要玩灯。当然,中秋没有像元宵节那样的大型灯会,玩灯主要只是在家庭、儿童之间进行的。过节日,最高兴的莫过于孩子们,有得吃,有得玩,大人们也喜上眉梢,皆因中秋节是团圆的节日。

《弟子规》、《三字经》


《三字经》和《弟子规》都是著名的童蒙读物。其内容讲的是处世待人之道理,其实也是非常适合成年人阅读的。

《三字经》着重于教人知识,《弟子规》则着重于做人的规矩。前者侧重于文化,后者侧重于文明。有些学者认为,应该先学习《弟子规》,培养一种规矩,再学习《三字经》。我觉得他们的说法是对的。孩子没有学习规矩,即便学习了很多知识,也是枉然的。

现在的父母很多时候太过注重孩子的学习状况和身体健康,而忽略了教育孩子什么是规矩。知识和规矩的失衡,已成为孩子成长过程中最大的问题,事关孩子的前途和命运。

一个没有规矩的孩子,就像一匹脱缰的野马,难以驯服。父母亲要费很多的精力、时间,甚至金钱来培养出有规矩的孩子。因此,我个人认为,要教育孩子,就得从他们还没出娘胎时,就开始了。一个胚胎在母体里,跟母亲血脉相连,母亲的言行举止,大大地影响着他/她。因此,如果怀着胎的准妈妈能在怀孕期间阅读《弟子规》和《三字经》,并在日常生活中把其内容所教导的加以实践,我相信她所生的婴孩,将来会是个有规矩的好孩子。

《弟子规》是要实践的,不只是口里说说就成事的。当我还在学校里执鞭时,我都会在教课之余,教导那些一年级的学生们《三字经》和《弟子规》,并且要他们实践于生活中。我也亲眼看到孩子们的改变。他们不再那么自私,愿意分享,也愿意帮助其他同学。我也要他们向我报告在家里的点点滴滴,比如他们如何对待父母亲、兄弟姐妹、左邻右舍等。从中让我了解他们是否真懂得运用所学的道理。很庆幸的,他们都能明白,也愿意实行。因此,我个人认为,这两部经典之作,是让我们培养出有规矩,有知识的孩子的重要管道。

市面上有很多这方面的教课材料,如果您希望看到自己的孩子有出类拔萃的品行和成就,那么,别再等了,自己学习,孩子也学习,何乐而不为呀!

I go Bananas .... :-?

I love bananas. Do you? In fact, I love banana cake even more.  Hence, whenever I have bananas in extra, I will and never fail, to bake banana cake. 
Yesterday night at 12 midnight, I preheated my oven and went on to bake a small loaf of banana cake and 4 small banana cupcakes.  Yes you didn't see wrongly, is 12 midnight.  I was very bored and as I walked into the kitchen, I saw the bunch of over-ripped bananas sitting down there, and the rest is history.
11 days ago, I baked a squarish banana cake using Cooking Ninja's (CN) recipe. This time round, I tried another recipe from  Sqidoo.com.  This recipe doesn't call for milk, cinnamon & nutmeg to be added. The whole process of baking this banana cake doesn't involve any electric appliances other than the oven. Just a spoon or spatula and stir stir stir, the job is done! Fuss free indeed! My motto again, simple and easy.  :-)
Some people call it banana cake, some call it banana bread. To me, whether is a cake or a bread, as long as it is tasty and simple, it makes no difference.  Talk about the taste and texture, this cake is more moist than the other one using CN's recipe. However, it doesn't  smell as aromatic as the previous one though I used more bananas. I think it was due to the different kinds of bananas used.  Nonetheless, the taste is good and the sweetness of the bananas make me eating it one piece after another (of course I cut it into very small pieces before consuming :-P).

Cheddar Cheese Cake (C.C.C.)车达乳酪蛋糕

This CCC has been a hit on some Malaysia Chinese food blogs.  Hence, I want to give it a try to see if it is as good as it claims.  I got the recipe from Potato Moon. Her blog is full of beautiful baked stuff. Thank you 月亮. :-)

Well, my verdict of this cake is: It is worth trying ~the cake is superb, whether taste or texture! The texture is moist and soft, something like a souffle. And it tastes like Light Japanese Cheesecake. You don't feel "heavy" eating this cake.废话少说, let's take a look at the pics.

Banana Banana ABC

I love to bake banana cake, because it is so easy. Furthermore, I have a fail-proof recipe, i.e. Cooking Ninja's banana muffin recipe.  Hence, my banana cake is always well received by those who tasted it. Thank you very much CJNfor this wonderful recipe. In fact, I baked all my banana cakes and muffins with this recipe. This time round, I did make a minor change by replacing melted butter with sunflower oil. This cake is so fluffy and moist, and the aroma of the over-ripped banana is so fragrant.  I can say that this is the best banana cake I have ever baked. :-P   Have a slice, friend?

Apple Puff苹果泡芙

Using ready-made puff pastry , I whipped up some simple Apple Puffs in half an hours' time.  Simple and Tasty, in line with my motto, Simplicity is Beauty.  haha ...

Ingredients:
half portion of the puff pastry
2 medium apples, peeled, cored & cubed
juice of 1 green lemon'
sugar, according to your taste
1 egg, beaten (act as egg wash on the pastry)

Method:
1. Cooked apple cubes together with all other ingredients, till carmaelised. Remove from heat and cool.
2. Thawed puff pastry.
3. Roll pastry till about 3mm thick. Cut into squares. Have to work quick as the pastry will become quite sticky.
4. Put the cooked apple filling onto the cut out pastry. Wrap it up and use a fork to tighten the edges.
5. Bake in preheated oven at 200*C for 15 minutes.  Serve with a cup of coffee, tea or milk. :-)

Yellow Split Beans

What is yellow split beans for?
There is this kind of dessert called "Tau Suan" (in Hokkien), using yellow split beans. Look at the video below and you will know.



Now you know yellow split beans in fact are Mung Beans. Mung Beans can be used in cooking many types of desserts. Tau Suan is only one of the types.
This dessert goes very well with "You Tiao or You Char Kway"(油条). Below is my version:

I follow Makansutra's recipe to the T, and the result is very satisfactory.  Come, have a bowl of Tau Suan with You Tiao! :-)
